PS Thai Style Peanut Noodles

INGREDIENTS

Peanut Sauce

  • 1/3 c smooth peanut butter

  • ¼ c pure maple syrup

  • 3 T low-sodium tamari

  • 1 ½ t rice vinegar

  • 1 t minced fresh ginger

  • 2 garlic cloves, minced

  • Water, as needed

Vegetable and Noodles

  • 12 oz whole-grain noodles

  • 1 small yellow onion, cut into thin slivers

  • 1 lg tomato, chopped

  • 1 c fresh basil, chopped

  • 1 c fresh cilantro, chopped

  • Toasted peanuts, for garnish

DIRECTIONS

  1. To make the peanut sauce, in a small bowl whisk together the peanut butter, maple syrup, tamari, rice vinegar, ginger and garlic. Thin the sauce with a little water if needed to achieve a creamy consistency. Set aside.

  2. For the noodles, cook the whole-grain noodles according to the package instructions. Drain and set aside.

  3. While the noodles cook, sauté the onion in a lg skillet over medium-high heat until it starts to brown, about 3 min. Add the tomato and cook for another minute.

  4. Add the peanut sauce, cooked noodles, basil, and cilantro. Cook until heated through.

  5. Serve garnished with the toasted peanuts.
