PS Oven Baked Falafel Burgers

INGREDIENTS

  • 2 cans chickpeas, rinsed and drained

  • 1 lg onion, diced

  • 2 cloves garlic; minced

  • 1 generous c fresh flat parsley, densely packed

  • ½ c oats

  • 3 T tahini

  • 2 T hot sauce

  • 3 T water

  • 2 ¼ t ground cumin

  • 2 t ground coriander

  • 1 t salt, or to taste

  • ¼ t black pepper

DIRECTIONS

  1. Preheat oven to 400 degrees.

  2. Using a nonstick roasting pan, roast chickpeas, onion, and garlic in the oven for 45 to 50 min. Add a splash of water and stir occasionally to avoid sticking. Once ingredients are golden, remove the pan from the oven, and set aside. Turn oven temperature down to 375 degrees.

  3. Into the bowl of a large food processor, add all falafel ingredients (including roasted chickpeas, onions, and garlic), and process until almost smooth, and better begins to stick to itself. Add an additional splash of water if needed.

  4. Remove bowl and blade from the base. Form falafel mixture into evenly shaped patties and place them on a nonstick baking sheet or oven-safe griddle.

  5. Bake at 375 degrees for 20 min. Flip burgers and bake for another 5 minutes, or until nice and crispy
