PP Buddha Bowl

INGREDIENTS

  • 1 c soba noodle cooked

  • 1 c mushrooms, sliced

  • 1 c bok choy, sliced

  • 1 c bean sprout

  • 1 c edamame

  • ¼ c red pepper, seeded & sliced into strips

  • ¼ c yellow pepper, seeded & sliced into strips

  • ¼ c green pepper, seeded and sliced into strips

  • 1 T soybean sauce

  • 1 T Hoisin

  • 1 T low sodium soy sauce

  • 1 T balsamic vinegar

DIRECTIONS

  1. Slice mushrooms and bok choy. Seed and slice the peppers into strips.

  2. You will need 3 pans to sauté and cook..(or wash as you go along)

  3. Divide soba noodles into 6 servings and place them into the 6 serving bowls.

  4. Sauté mushrooms for 2 min. Remove and place in next to soba noodles. Clean out the pan or use another.

  5. Sauté Bok Choy slices and Hoisin sauce for 2 min. Remove and place next to the mushrooms. Clean out the pan or use another.

  6. Sauté bell peppers in soybean sauce for 2 min. Place different color peppers as bursts of color in your Buddha bowl.

  7. Serve hot and enjoy!
