PS Baked Falafels with Homemade Tzatziki Sauce

INGREDIENTS

Tzatziki Sauce

  • 14 oz Firm Tofu

  • 3 T lemon juice

  • 1 T red wine vinegar

  • 3-4 garlic cloves

  • 1 English Cucumber; seeded

  • 1 T dill, fresh

  • 6 oz nondairy yogurt

Falafels

  • 3-4 pitas, cut in half

  • 1 5 oz can chickpeas, drained and rinse

  • 3 garlic cloves

  • ¼ white onion

  • 1 c chopped spinach, packed

  • ¼ c parsley, dried

  • 3 T tahini, no oil added

  • 1 T lemon juice

  • ½ t baking soda

  • 11/2 t salt

  • ½ t ground cumin

DIRECTIONS

Tzatziki Sauce

  1. Add all ingredients to blender and mix until smooth and creamy.

Falafels

  1. Preheat oven to 400 degrees F.

  2. Add all ingredients to food processor and pulse until a coarse meal is formed.

  3. Using your hands, form 6- falafels ad slightly flatten.

  4. Place on a parchment-lined cooking sheet and bake 25 min.

  5. Broil for an additional 5 min.

  6. Flip patties and broil for an additional 5 min.

TIPS

  1. Simply stuff 1 or 2 falafels in a pita and serve with your favorite salad fixings. (Lettuce, onion, cucumber, tomato) Do not forget the sauce.
