PP Sweet Potato Noodles with Spicy, Crispy Tofu

INGREDIENTS

  • 4 mid-sized sweet potatoes

  • 2 small block of tofu

  • 2-3 c spinach

  • ¼ t onion powder

  • ¼ t salt

  • ¼ t paprika

  • Vegetable broth for sautéing.

DIRECTIONS

  1. Make Tofu marinade: 2 T sriracha, 2 T gluten-free soy sauce, and 2 T maple syrup and 2 T sesame seeds

  2. Preheat oven to 400 degrees F.

  3. Cut tofu into cubes and marinate.

  4. Set aside until the oven is warm. Bake on a lined baking sheet for about 25 min or until browned and crispy.

  5. Spiral sweet potatoes and sauté in a bit of vegetable broth for about 5 min.

  6. Noodles should be cooked “Al Dente”.

  7. Add spinach and tofu, mix well and enjoy!
