PP Garlicky Kale Salad

Chefs: The Krocks, Krocks in the Kitchen

Makes: 2 meals, or 4 side servings

INGREDIENTS

Salad Base

  • 2 lg bunches kale (1 lb)

Dressing

  • 2 T water

  • ¼ c nutritional yeast

  • 1 T Bragg Liquid Aminos

  • 1 T apple cider vinegar

  • 1 sm lemon (zest & 2 T juice)

  • 2-3 cloves fresh garlic, minced

Optional

  • 1 can no sodium Garbanzo beans, rinsed

DIRECTIONS

Salad Base

  1. Prep your kale. I like to rip the kale into bite-size pieces as I am removing it from the stems.

  2. Rinse in a lg mixing bowl filled with water and then drain into a colander. Repeat if desired.

  3. Pat dry or use a salad spinner to remove as much water as possible.

Dressing

  1. Measure ingredients into a small bowl and whisk to combine.

Combination

  1. Add the dressing mixture to the bowl with the kale using your hands to massage for around 5 min until softened.

  2. Serve and enjoy!

TIPS

  1. The great thing about this dish is that you can have it all on its own or add any number of veggies, beans, toppings, etc.

  2. Use the dressing on our regular nightly salads; it packs a really nice punch of flavor.
