Brian's Special Sweet and Smoky Corn

INGREDIENTS

  • 1-16 oz bag frozen corn, or 2- 15.25 oz cans no salt added sweet corn, or 3 c fresh sweet corn, cut off the cob)

  • 2 pitted Medjool dates, finely chopped

  • 1 t liquid aminos, low sodium soy sauce or Tamari

  • ½ t garlic powder

  • ½ t onion powder

  • 1 few dashes Liqui Smoke or ½ t smoked paprika

  • OPTIONAL: Salt and pepper to taste

DIRECTIONS

  1. Heat a saucepan on medium-low.

  2. Add in chopped dates, liquid aminos, and a splash of water. Stir 1 minute until the dates start to soften.

  3. Add in the corn and remaining ingredients, along with another splash of water. Stir to combine.

  4. Cover and cook for 5 to 10 min, stirring occasionally. Enjoy!

TIP

  1. This dish is perfect for summer! You can serve it alongside a nice plant-based burger and a fresh salad like we do. Or maybe, grill up some carrot hot dogs! This recipe could even be used as a topping on your burgers or dogs. Either way, this is a simple side dish that is sure to impress.
