PP Tofu Fried Rice

INGREDIENTS

  • 1 pkg baked tofu – teriyaki flavored

  • 1 pkg microwavable white rice

  • 1 c frozen peas

  • 1 c shredded carrots

  • 1 t onion powder

  • 1 t garlic powder

  • ½ c soy sauce or liquid aminos

  • ¼ c fresh scallions, chopped

  • Salt and pepper to taste

DIRECTIONS

  1. Cook the rice in the microwave according to the instructions on the bag.

  2. Combine all the ingredients in a large pot, aside from the salt, scallions, and pepper. Heat over medium heat for about 10 min or until all the ingredients are hot.

  3. Salt and pepper to taste and top with the fresh chopped scallions before serving.
