PP Vegan White Bean Alfredo

INGREDIENTS

Base

  • 1-12 oz pkg brown rice spiral pasta

  • 1-10 oz pkg frozen broccoli & cauliflower

  • ¼ c chopped roasted red bell pepper (packed in water)

Sauce

  • 1 white onion, diced

  • 1 ½ c low sodium vegetable broth (divided)

  • ¼ t salt

  • 4 t garlic, minced

  • 15 oz can white beans, rinsed

  • ¼ c nutritional yeast

  • 1 T lemon juice

  • 1 t rice vinegar

  • 1 heaping t white miso

  • ½ t garlic

DIRECTIONS

  1. Dice onion and add to saucepan along with 1 c of broth and salt.

  2. Sauté over med-high heat just until liquid is about to disappear.

  3. Add garlic and stir – remove from heat.

  4. Drain and rinse beans and add to the blender.

  5. Add all remaining sauce ingredients including the onion to the blender.

  6. Blend until smooth and creamy.

  7. Prepare pasta according to pkg directions.

  8. Prepare pasta according to pkg directions.

  9. Prepare frozen veggies according to pkg directions.

  10. Chop the red bell pepper.

  11. Drain pasta and return to pot along with veggies and sauce.

  12. Stir well and serve.
