PP Pan Roasted Corn Salsa

INGREDIENTS

  • ½ c diced yellow onion

  • ½ c diced red bell pepper

  • 1 T minced jalapeno, stem, seeds and membrane discarded

  • 1 ¼ c frozen corn

  • 2 T cilantro, chopped

  • ½ T lemon juice

  • ½ T lime juice

  • ½ t salt

DIRECTIONS

  1. Heat a skillet over medium heat for 2 min (cast iron works best). Add the onion, red bell pepper and jalapeno and sauté for 5 min, adding a splash of water if they stick. Add the corn and sauté for 3-4 min, until the edges are browned.

  2. Transfer to a small bowl and allow to cool for 5 min, then stir in the cilantro, lemon juice, lime juice and salt. Place in the fridge to chill before eating.
