Smoky Split Pea Soup with Brown Rice Noodles

INGREDIENTS

  • 7 oz yellow split peas, soaked overnight

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 small carrots, chopped

  • 4 medium potatoes, medium cubes

  • 5 ¾ c water

  • 2 t smoked paprika

  • 2.6 oz rice noodles

  • Black pepper and Himalayan salt to taste

  • Garnish: Fresh parsley, thyme, and dill

DIRECTIONS

  1. Cover split peas with water (about 3” above peas) Soak overnight, then rinse and drain.

  2. Boil the water.

  3. Add all the ingredients (except rice noodles) into a medium pot. Pour over with the boiling water, mix well, and bring to boil. Simmer until peas are done (mine too about 50-60 min).

  4. Turn off the heat, mix in a big handful of chopped fresh parsley, and add dry brown rice noodles. They will soften in about 3 min.

  5. Let soup cool a bit, taste and add boiled water for a thinner consistency, add pepper/salt, if necessary.
