PP Oat Rolls

INGREDIENTS

Gluten Free Oat Rolls

  • 2 ½ c oat flour (See Tip below)

  • ½ t instant or dry active yeast

  • 1 T white miso mixed with ¼ c hot tap water

  • 1 c hot tap water

  • 2 T seasoning (I added dried chives)

  • ¼ c of aquafaba (for browning – use right before baking.) Optional

  • Extra oat flour for kneading

Spelt – Oat Rolls

  • 1 ¼ c oat flour, (See Tip below)

  • 1 ¼ c spelt flour

  • ½ t instant or dry active yeast

  • 1 T white miso mixed with ¼ c hot tap ater

  • 1 c hot tap water

  • 2 T seasoning (I added dried chives)

  • ¼ c of aquafaba (for browning – use right before baking.) Optional

  • Extra spelt flour for kneading

DIRECTIONS

(Directions are the same for both roll recipes.)

  1. In a lg bowl, combine all dry ingredients.

  2. Mix in miso mixture and hot water.

  3. Stir all ingredients together until well combined.

  4. Cover with plastic wrap and let stand on the countertop for 3 hours.

  5. After 3 hours, place the dough onto a WELL floured surface.

  6. Preheat oven to 450 degrees.

  7. The dough will be sticky and will need extra flour to make it workable.

  8. Knead until dough becomes a ball and cut into 8 pieces.

  9. Make dinner roll shapes with dough and place on a baking pan lined with parchment paper.

  10. Optional: Brush a small amount of aquafaba over rolls. (This will give them a nice brown color.)

  11. Bale at 450 degrees for 25 min or until golden brown.

TIPS

  1. To make oat flour, pulse your rolled oats in a high-speed blender to process into flour.)
