PP Spicy Vegan Lettuce Wraps

INGREDIENTS

The Filling

  • Chuck’s Taco Meat (see pbnsg.org)

~or~

  • 2 c riced cauliflower

  • 6 oz shitake mushrooms, diced

  • ½ yellow onion, diced

  • 3T low sodium soy sauce

  • 1 T minced ginger

  • 1 T minced garlic

The Hoisin Sauce

  • 2 T molasses

  • 2 T rice vinegar

  • 1 T powdered peanut butter (PB 2)

  • 2 t sriracha

  • ¼ t 5 spice powder

The Wraps

  • 8 oz water chestnuts (diced)

  • 3-4 green onions (diced)

  • Your favorite lettuce (I used butter lettuce)

DIRECTIONS

  1. Add the riced cauliflower, mushrooms, onions, and soy sauce to a large skillet and simmer over medium heat until veggies become softened.

  2. Stir in ginger and garlic, mix well, and reduce heat to low.

  3. Meanwhile, in a small bowl, whisk together all the sauce ingredients until smooth.

  4. Slowly add sauce to filling, mixing to ensure everything is evenly coated.

  5. Reduce heat and simmer 1-2 min.

  6. Add chopped water chestnuts and green onions and stir well.

  7. Wrap in your favorite lettuce leaves and serve.
