PP Tzimmis with Raisins

INGREDIENTS

  • 3 lbs sweet potatoes, peeled and large dice

  • 4 c large diced carrots

  • 1 T honey

  • 2 c raisins (or other dried fruit-apricots or prunes are great, too)

  • 3 t cinnamon

  • 2 c orange juice

  • 2 T fresh orange zest

DIRECTIONS

  1. Place all ingredients into a pot, simmer until potatoes and carrots have softened, adding additional juice, if needed. Cook time is about 30 min.

  2. Serve as a side, or combine with other dishes like lentils, cabbage slaw, or quinoa salad.
