PP Sweet Green Beans

INGREDIENTS

  • 1 lb green beans, rinsed and trimmed

  • 2-3 T date syrup*

  • 2 T pecans, lightly toasted (optional)

  • Pepper (to taste)

DIRECTIONS

  1. Steam green beans for 2-3 min, in a steamer or colander sitting over boiling water, just until they are bright green and slightly tender. (it is easy to overcook them if you walk away from the pan).

  2. Toss the cooked green beans with date syrup and pecans and season with a sprinkle of freshly ground pepper, to taste.

*Timaree’s Date Syrup

INGREDIENTS

  • 5 Medjool dates

  • 1/2 c water

  • 1/4 t cinnamon

  • 1/4 t vanilla

DIRECTIONS

  1. Double check that you have removed the pits), add water, cinnamon, and vanilla in a high-powered blender and blend until completely smooth. If you don’t have a high-powered lender (Vitamix or Blendtec), it may take a little extra blending time, so be patient and add a little more water if necessary.
