PP Seasoned Kale with Pasta

INGREDIENTS

  • 8 oz whole-grain pasta (whole wheat, spelt or brown rice)

  • ½ bunch kale, chopped

  • ½ onion, chopped

  • ¼ c nutritional yeast

  • ¼ cup capers

  • ½ t black pepper, or to taste

  • ½ t lemon juice

  • ¼ c soy/plant milk or water, depending on low-fat preference

  • ¼ c basil, chopped

DIRECTIONS

  1. Sauté onions in ¼ c water for 5 minutes. Add chopped kale and cook until tender, about 4 minutes.

  2. Combine nutritional yeast, capers, black pepper, lemon juice and soy/plant milk/water. Heat in microwave for 20 seconds.

  3. Cook pasta according to package directions.

  4. To serve, place spaghetti on a plate. Add sautéed kale/onions and sauce; toss to mix well. Top with chopped basil.
