PP Airfried Stuffed Jalepeno Poppers

INGREDIENTS

Hummus

  • 1 recipe STL Girls Clean Slate Hummus

  • (reserve the juice from the can of beans (aquafaba))

  • Replace tahini with roasted garlic

Poppers

• premade hummus from above

• 10 jalapeños

• 1 c flour of your choosing (I like oat, whole wheat or spelt)

• 1 c panko breadcrumbs

• ¼ c nutritional yeast

• Smoked paprika

DIRECTIONS

1. Make your hummus and allow it to chill in the fridge so that it can thicken a little.

2. Cut jalapeños in half (lengthwise) and remove seeds.

3. You will need three cereal-size bowls. In one, mix the panko and nutritional yeast.

In another, the flour and the third the aquafaba.

4. Scoop hummus into jalapeños and dip them into the aquafaba. You only need to

dip the jalapeño part into the liquid. Next, dip in flour, then back again to the

aquafaba, and finally in the breadcrumb bowl. Sprinkle additional breadcrumbs on top and sprinkle with smoked paprika, and place in the air fryer.

5. Air fry for 10 min at 400 degrees F. You are looking for the poppers to begin to turn golden brown. Start watching them at the 9 min mark, it could take up to 13 min, depending upon your fryer.

TIPS

1. Fill your jalapeños with any flavor of hummus! Either make or purchase a few

assorted flavors and mix it up.

2. Substitute smashed garlic for the tahini on the Clean Slate Hummus.

3. The seasoning can also be fun to play with. Swap out paprika for oregano and

include a marinara dipping sauce for an Italian flair!

4. Popper last 5-7 days in the refrigerator in a sealed container.
