PP or PS Blueberry Quinoa

Total Time: IP: 27 min, Stovetop: 25 min


INGREDIENTS

  • 1 c dry quinoa

  • 2 c water

  • 2 ripe bananas

  • 1 c frozen blueberries

Suggested Toppings

  • 1 T maple syrup

  • 1 T chopped pecans or walnuts (PS only)

  • Unsweetened almond milk

DIRECTIONS

Instant Pot

  1. Place all ingredients (except toppings) into your Instant Pot. And cook on high pressure for 2 min.

  2. Allow a natural lease, usually about 10 min, when cooking is finished.

Stovetop

  1. Put quinoa, bananas, blueberries, and water in a medium saucepan and cook according to instructions on the quinoa package.

Both

  1. Place into bowls and top with maple syrup, walnuts or pecans (PS only), and almond milk.

TIPS

  1. Thoroughly rinse quinoa to remove bitterness.
