PP Mango Popsicles

Makes: 10 Popsicles

Freeze Time: Overnight

INGREDIENTS

  • 1-16 oz bag frozen pineapple chunks

  • 1-16 oz bag of frozen mango chunks

  • ½ c lime juice

  • 1 c unsweetened almond milk (vanilla or original)

DIRECTIONS

  1. Add all the ingredients to a blender. NOTE: The almond milk and lime juice will start to “curdle”, so do NOT combine them until your pour into the blender. I have not had any issues putting both together before I blend, but you can also blend in the almond milk first, then add the lime juice separately if you are concerned.

  2. If you have a high-speed blender like a Vitamix, blend on the highest speed using the tamper to alternate pushing down towards each of the four corners. I you have a regular blender; you may need to add more liquid (water or extra almond milk) and/or let your fruit soften a bit to get it to blend.

  3. Blend on high until everything is incorporated, about 1-2 minutes.

  4. Pour/scoop mixture into popsicle molds.

  5. Freeze overnight and enjoy!

TIP

  1. The best part is: You can really use any frozen fruit to make these!
