PP Gray Table Classic Crushed Lentil Soup

INGREDIENTS

  • 1 onion, diced

  • 1 carrot, peeled and cut into rounds

  • 1 russet potato, peeled and chopped

  • 1 t cinnamon

  • 1 t cumin

  • 1 t salt

  • 1 c red lentils

  • ½ c short grain brown rice

  • 6-8 c water

  • Juice of 1 lemon

  • Black pepper to taste

DIRECTIONS

  1. Water sauté the onion in a large soup pot or Dutch oven for 5ish min or until soft.

  2. Add the salt, cinnamon and cumin.

  3. Add the carrot and potato and sauté for an additional 2 min.

  4. Add the lentils, brown rice and 6 c of water (start with 6 c of water and add more as needed to reach desired consistency at the end.)

  5. Bring to a boil. Once boiling, turn down to simmer, cover and let everything get soft (about 40 min).

  6. Using a hand blender, partially puree soup until “crushed lentil” consistency is reached.

  7. Add the juice of one lemon and black pepper to taste.

  8. Enjoy!
