PP Easy Eggless Frittata

INGREDIENTS

  • 1 ½ c chickpea flour

  • 1 ½ c nondairy milk unsweetened/unflavored

  • ¼ c nutritional yeast

  • 1 t onion powder

  • 1 t garlic powder

  • 1 t smoked paprika

  • ¼ t turmeric

  • 1/8 t black pepper

  • 2 t baking powder

  • 1 – 1 ½ c chopped veggies (peppers, broccoli, cabbage, mushrooms, onions, potatoes)

DIRECTIONS

  1. Preheat oven to 350 degrees F.

  2. In a lg mixing bowl add in all the dry ingredients. Whisk in the non-dairy milk until batter becomes like pancake consistency. Fold in chopped vegetables.

  3. In a 9” silicone round or parchment lined 9” pan – pour eggless frittata mixture into pan.

  4. On the top of the frittata place sliced tomatoes (or mushrooms/broccoli, peppers).

  5. Gently push the topping veggies down to stick slightly into the batter.

  6. Bake for 30-35 min until golden.

TIP

  1. You can broil your frittata for 1 min. (Be sure your pan can be broiled.)
