PP Cider Poached Peaches

INGREDIENTS

  • Peaches, slightly firm (do not use the mushy, extra juicy ones, you can use nectarines, too)

  • 1 t whole allspice or cloves-I used allspice

  • 1 cinnamon stick

  • ½-1 bottle of hard cider depending on how much you are poaching (enough to fill the pan ½ way up the fruit)

Garnish

  • Fresh berries

  • Sprig of mint

DIRECTIONS

  1. Cut fruit in half and remove the pit by twisting the peach as you would an avocado, this is easier with free-stone peaches vs. early season cling-stone.

  2. Pour cider into a saucepan and place peaches skin side down.

  3. Cider should come up halfway on the sides of the fruit, if it does not, add some water to the pan to make sure you have enough poaching liquid

  4. Cover and poach on medium simmer until a knife inserts easily, about 5 min.

  5. Serve topped with fresh berries or a sprig of mint.
