PP Watermelon Refresher

Chef: Timaree Hagenburger, The Nutrition Professor

Prep Time: 5 min

INGREDIENTS

  • 1 1/2 c watermelon (with white rind)

  • 3/4 c cucumber

  • 2-4 T fresh mint

  • 1 lime, zest and juice

  • Ice cubes, based on taste preference

  • 2 t chia seeds (optional)

DIRECTIONS

  1. Combine all ingredients in blender, adding as little or as much ice as desired. Enjoy every sip!

TIPS

  1. Be sure to use the white part of the rind, too! It is packed with plant-based goodness!

  2. Be sure to zest citrus fruits BEFORE cutting them into pieces to squeeze the juice. A microplane is my favorite zesting tool, and we want the zest, as it may prevent skin cancer
