PP & PS Greek/Lebanese Favorite Meal

Recipes can be made during cook times to decrease the total time for all 3 dishes.


PP Tabbouleh


Makes: 4 servings

Prep Time: 20 min

Cook Time: 40 min

Total Time: 1 hr


INGREDIENTS

  • 1 cucumber, diced small

  • 2 c tomatoes, diced small

  • 2-3 garlic cloves, minced

  • 1 onion, diced small

  • 1 lemon, juice of

  • 1 c quinoa (cooked) 2 c water or vegetable broth & 1 c quinoa

  • 1 bunch parsley (curly or flat), chopped

  • Salt and pepper to taste.


DIRECTIONS

  1. Put 2 c of water or vegetable broth in a pot with 1 c quinoa. Bring to a boil, turn down the heat and simmer for about 20 minutes or until all the liquid is absorbed.

  2. Fluff quinoa with a fork.

  3. Dice onion, cucumber, and tomato into small pieces.

  4. Mince garlic.

  5. Chop parsley.

  6. Add fluffed and cooled quinoa, lemon juice, salt, and pepper, mix well.


PS Falafel
Makes: 4 – 6 Servings

Prep Time: 20 min

Cook Time: 40 min

Total Time: 1 hr


INGREDIENTS

  • 1 onion

  • 2-3 garlic cloves, minced

  • 2 T tahini (no oil added, grind your own from hulled sesame seeds)

  • 3-4 c of cooked chickpeas

  • ½ t salt

  • ½ t pepper


DIRECTIONS

  1. Preheat oven to 375 degrees, F.

  2. Peel onion and garlic.

  3. Add all ingredients to a food processor. Mix well.

  4. Form falafels and place them on a lined baking sheet.

  5. Bake for 20 minutes, turn and bake for another 20.


PP Tzatziki

Makes: 4-6 Servings

Total Time: 5 min


INGREDIENTS

  • 1 c plant-based yogurt

  • 1 cucumber, peel and shredded

  • 1 T dill

  • 2 garlic cloves, minced

  • ½ lemon’s juice


DIRECTIONS

  1. Peel and shred cucumber.

  2. Mince garlic and finely chop the dill.

  3. Add all ingredients to a bowl. Mix well.
