PP Italian Stuffed Tomatoes

INGREDIENTS

  • 8 beefsteak tomatoes

  • 3 c cooked short grain brown rice

  • 3 shredded zucchini

  • 1 large onion chopped small

  • 6 cloves garlic

  • 4T salt-free tomato paste

  • 1/2 a lemon juiced

  • 2T Italian seasoning

  • Salt to taste

DIRECTIONS



  1. Preheat oven to 400.

  2. Line a 13x9 glass dish with parchment paper.

  3. Cut tops off the tomato and set aside. Scoop out the middle of the tomato and put it into a bowl. Set tomato and top into the glass dish.

  4. In a hand chopper or food processor, finely chop onion and garlic. Place them in a bowl.

  5. Next grate the zucchini and place it in a bowl with onion.

  6. Dice the onion and add it to the bowl. Then add seasoning and tomato paste and mix well.

  7. Now add cooked rice and combine all ingredients well.

  8. Stuff rice mixture back into tomatoes and put the top on. Place in the oven for 45-60 minutes.

  9. Remove from oven and carefully lift each tomato out with a spatula and spoon and serve.
