PP Savory Oats with Homemade PP Salsa and PS Cheeze Sauce

INGREDIENTS

  • 4 c rolled oats

  • 1 14 oz can fire-roasted diced tomatoes

  • 2 c frozen mixed vegetables

  • ½ bag of cruciferous vegetables (can substitute with kale and shredded cabbage)

  • 1 red onion diced

  • 2 c chopped fresh broccoli sliced

  • 1t smoked paprika

  • 1 t garlic powder

  • 1 t onion powder

  • ½ t chipotle powder

  • 4 c vegetable broth (I like Pacific brand. It is oil-free.)

Cheeze Sauce

  • 1 c raw cashews

  • ¾ c hot water

  • ¼ c nutritional yeast

  • 1 T lemon juice

  • 1 t smoked paprika

  • ½ t Himalayan salt

  • ¼ t turmeric

Salsa

  • 1 30 oz can of whole roasted tomatoes drained

  • 2 cloves of garlic minced

  • ¼ c chopped cilantro (more if you like)

  • 2 dried red peppers, chopped

  • Salt to taste

DIRECTIONS

Savory Oatmeal

  1. Preheat oven to 400 degrees.

  2. Mix all ingredients in a large mixing bowl.

  3. Spread evenly in a parchment-lined 13” x 9” baking dish.

  4. Bake for 45 minutes.

  5. Remove from the oven and let it sit 15 min before serving.

IF USING CHEEZE SAUCE OR SALSA, NOW IS A GOOD TIME TO PREPARE AS SAVORY OATMEAL BAKES.

PS Cheeze Sauce (see Cheeze Sauce at PBNSG.org for PP)

  1. Soak cashews (1-24 hrs beforehand) in hot water. (For a quick method. Put in a pot and bring to a boil. Take off heat and let stand for 15 minutes. Drain the water out before using.)

  2. Put all ingredients into a blender and blend until smooth.

Salsa

  1. Put all the ingredients in a bowl and mix for chunky salsa. Or, for smooth salsa, blend all ingredients until smooth.

Once Savory Oatmeal has cooled for 15 minutes, dress with salsa and cheeze sauce as desired.
