PS or PP Big Bowl of BBQ Cheezy Potato Mac

INGREDIENTS

  • 5 lg potatoes diced (I used Yukon gold)

  • 10 oz BBQ pulled Jackfruit*

  • 2 ½ c of macaroni noodles

  • 1-2 avocados diced (Eliminate for PP)

  • Any vegetables (I used a bag of frozen corn and mixed vegetables)

  • 2 c of plant-based milk (both oat and soy work)

  • 4 T of flour (I used whole wheat flour)

  • 2/3 c + 1 T nutritional yeast

  • 1 t garlic powder

  • 1 t onion powder

  • ¼ t cumin

  • ¼ t paprika

DIRECTIONS

1. Boil or steam the diced potatoes. Try not to overcook them.

2. Boil the noodles and make sure to cook them al dente (until slightly firm)

3. Warm jackfruit in microwave or over stove and combine the potatoes, jackfruit, noodles, and diced avocado in a bowl and set aside. You want to make sure that the jackfruit is not drenched in BBQ, you don’t want it to overpower the dish you just want it to add a kick of flavor.

4. Combine the rest of the ingredients in a pot and let it simmer on the stove until thickened. Keep stirring to avoid clumps. When done, add to the bowl and enjoy!

TIPS

BBQ Jackfruit : I make my own BBQ jackfruit by shredding a can of young green jackfruit and sautéing it in homemade BBQ sauce.
