PP Brownie Cake with Chocolate Frosting

Brownie Chocolate Cake

INGREDIENTS

  • 2/3 whole wheat flour

  • 2/3 c spelt flour

  • 2/3 c oat flour

  • ½ t baking soda

  • 1 t baking powder

  • 1/3 c cocoa powder

  • ½ c nondairy milk unsweetened and unflavored

  • ½ t apple cider vinegar

  • 1 t vanilla extract

  • ½ c date paste

  • ½ c unsweetened applesauce

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. In a lg mixing bowl, add in all the dry ingredients and mix together well.

  3. In a small cup mix together nondairy milk and apple cider vinegar and set aside for around 5 min to make a buttermilk substitute.

  4. Mix the wet ingredients into the dry mixture including the buttermilk substitute.

  5. After the dry and wet ingredients are completely incorporated move the cake batter to a 9” round cake pan. (Use the toothpick test to make sure cake is fully cooked.)

  6. Let cake completely cool before removing from the pan.

Chocolate Frosting

INGREDIENTS

  • 1 1 /2 c cooked sweet potatoes (without the skin)

  • 3 lg pitted dates

  • ¼ c cocoa powder

  • 1 – 2 T of nondairy milk unsweetened/unflavored

DIRECTIONS

  1. In a high-speed blender add all the ingredients and blend until smooth.

  2. If frosting is not sweet enough for your taste, add 1-2 extra pitted dates.

  3. Chocolate frosting should be very thick in consistency.

  4. Place chocolate frosting into the refrigerator for 10-20 min until chilled.

  5. Frost your cakes, brownies, or any dessert…I’ve even had the chocolate frosting with just fresh fruit!

TIPS

  1. Roasted sweet potatoes in the oven is our favorite way of making this recipes more naturally sweet.

  2. Garnish your cake with strawberries or raspberries.
