PP Bean "Meat" Balls

INGREDIENTS

Meatballs

  • 1 c farrow cooked

  • 1-15oz can kidney/pinto beans, drained and rinsed

  • ½ c rolled oats

  • ½ c whole wheat breadcrumbs

  • ½ c red onion, diced

  • 2 T tomato paste

  • 3 T veggie broth

  • 1 t garlic powder

  • 3 t Italian/pizza seasoning

  • 1 t miso

  • Black pepper

Breading

  • 1/3 c whole wheat breadcrumbs

  • 1/3 c nutritional yeast

  • 1 t Italian/pizza seasoning

DIRECTIONS

  1. Preheat oven to 350 degrees F.

  2. In a food processor, mix all of the ingredients and pulse until everything is very well combined.

  3. In a small bowl, mix breading ingredients together.

  4. Make small “meatballs” and roll them into the breading mixture.

  5. Line a baking sheet with parchment paper and add the breaded “meatballs”.

  6. Bake for 30 minutes until lightly brown, turn at 15 min.

  7. Enjoy!
