PP Single-Serving Beans in a Hurry

Prep time: 5 minutes

Cook time: about 10 - 15 minutes (or microwave 1-2 minutes)

INGREDIENTS

  • 1 15-oz can pinto beans

  • ¼ c ketchup or tomato sauce

  • 2 T nutritional yeast

  • 1 t garlic powder

  • ½ t oregano

  • ½ t cumin

  • black pepper, to taste

DIRECTIONS

  1. Rinse and drain beans. Place in a bowl. Preheat oven to 350 degrees.

  2. Add ketchup (or tomato sauce), nutritional yeast, garlic powder, oregano, cumin, black pepper. Stir until combined.

  3. Pour bean mixture into an oven-proof dish. Bake for 10-15 minutes until heated through.

  4. Serve as is or pour over brown rice or chopped lettuce.

TIPS

  1. If you are in a super hurry, microwave dish for 1 minute or until heated through.
