PP Chocolate Dreams Holiday Pudding

INGREDIENTS

  • 4-6 Medjool dates, use 6 if you like your desserts sweeter

  • 1 cup oat milk (or your favorite plant milk)

  • 4 T Dutch process cocoa powder or your favorite Cacao

  • 1 t vanilla

  • 3 T chia seeds

  • 4-6 T pumpkin puree (6 will give you a more pronounced pumpkin flavor)

  • ½ t cinnamon

  • ¼ t nutmeg

  • Festive fruit toppings

DIRECTIONS

  1. Pit the dates, if they are not already pitted. Always a good idea to check. If they are hard, soften with a little warm water. Drain water. Only dates go in the blender.

  2. Place the ingredients in a high-speed blender. I put milk first, then the rest.

  3. Blend until the pudding is as smooth as you like, 1-4 minutes. I like blending 4 minutes for smoothest consistency.

  4. Chill pudding in your refrigerator.

  5. Dress up your holiday indulgence with your favorite colorful festive fruits such as pomegranates and berries, etc.
