Breakfast: Overnight Oats everyday with Organic rolled oats, flaxseed, cinnamon, fresh berries/fruit, almond milk, maple syrup and every now and then a little bit of peanut butter! On weekends, I will make a No oil Tofu Scramble with Spinach and fresh fruit on the side or Homemade No Oil Blueberry Pancakes with Whole Wheat Flour, cinnamon, baking powder, almond milk, apple cider vinegar and maple syrup!
Lunch: Featured is, No Oil Tempeh Reubens with baked oven fries! Lunch is usually ever changing for me, some days I will have a big salad with chickpeas, or chickpea/lentil schwarmas, or No Oil White bean chili.
Dinner: Featured is Chana Masala and a big salad with fresh veggies! This is also usually ever changing and varies week to week as I like to cook different things. Sometimes I cook, Black Bean Burgers with Sprouted Grain Buns. Curry, Burrito Bowls with black beans, brown rice, corn, salsa, avocado, Lentil Sloppy Joes, etc.
