INGREDIENTS

  • 1 c onion, diced
  • 1 c carrots, sliced
  • 1 8-oz jar roasted red peppers, diced
  • 2 cans chickpeas, rinsed and drained
  • 1 T cumin
  • 2 T tomato paste (or ketchup)
  • ½ (16 oz.) pkg frozen cauliflower florets
  • 2 c vegetable broth
  • 1 24 oz jar diced tomatoes
  • 1 large handful of baby spinach

DIRECTIONS

  1. Saute sliced carrots and diced onion in a small amount of water until tender, about 8 minutes. Add more water if pan begins to brown.
  2. All remaining ingredients into a saucepan with carrots and onion. Simmer until ready to serv.
