Ingredients

  • 1 cup whole wheat flour
  • 1 cup oat flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ⅓ cup maple syrup
  • ½ cup applesauce
  • 2 tsp. vanilla extract
  • 1 cup soy milk
  • 1 12-oz. pkg. frozen blueberries

Directions

  1. Preheat oven to 400 degrees.
  2. Mix first six ingredients in a large bowl.
  3. Place remaining ingredients in the center and mix gently.
  4. Spoon batter into a muffin pan lined with baking cups.
  5. Bake 25 minutes or until a toothpick inserted in the middle comes out clean.
