- 2 sweet potatoes, peeled and cut into chunks
- 1 cup water or vegetable broth
- 2 tsp. minced ginger
- Place potatoes, water (or vegetable broth), and ginger in a pot.
- Bring to a boil and then simmer until potatoes are tender, about 8 minutes.
- Pour everything into a blender and blend until smooth.
- Add salt and pepper to taste.
