Ingredients

  • 2 sweet potatoes, peeled and cut into chunks
  • 1 cup water or vegetable broth
  • 2 tsp. minced ginger

Directions

  1. Place potatoes, water (or vegetable broth), and ginger in a pot.
  2. Bring to a boil and then simmer until potatoes are tender, about 8 minutes.
  3. Pour everything into a blender and blend until smooth.
  4. Add salt and pepper to taste.
